  • 300 g sugar

  • 257 ml port — ruby port

  • 257 ml orange juice

  • 2 sticks cinnamon sticks

  • 3 star anise

Step by step

    Grate the zest of a small orange. Put the zest in a medium-sized saucepan with 350g cranberries, 175g sugar, 150ml ruby port, 150ml orange juice, 1 cinnamon stick and 2 star anise.

    Heat gently until the mixture is simmering, making sure you stir it all the time.

    Then turn down the heat and leave it to simmer, uncovered, for .

    Add 2 orange slices and simmer for a further 5 to , until the cranberries have reduced.

    Before serving, remove the cinnamon, star anise and orange slices.
